Monday Munchies: NO bake chocolate oatmeal cookies recipe

These were a cookie my granny used to put in lunch boxes when her 9 children were little.

2 cups sugar
4 Tablespoons cocoa powder
1 stick butter (do NOT use margarine)
1 cup peanut butter (we use creamy but if you like chunky that works too)
1  Tablespoon Vanilla
3 cups quick oats (not instant)

cook all ingredients other than vanilla, peanut butter  and oats in a saucepan on med lo heat . Stirring constantly. when the mixture begins to boil you want to allow it to rapidly boil EXACTLY 90 seconds stirring the entire time. Remove from heat, stir in the peanut butter until melted, then add the vanilla and the oats a little at a time, this gets very thick but make sure all oats are completely covered.

Cover your island or table with waxed paper and drop by spoonfuls onto the wax paper and let cool about 2 hrs. This makes about 3 dozen cookies (but they go really fast, around here the kids call them "crack cookies" because they are so addictive. I love making them in the summer months because I can do fresh homemade cookies without using the oven and in Texas that's a big help.

  2. These look really great! I had this as a kid only without the peanut butter, I'll have to make them sometime, they were always so good and peanut butter would be perfect in them!
