Mexican beef casserole (recipe)

1 pound ground beef
1 small bag of frozen corn (a can of corn will work too)
1 package spanish rice mix
1/2 onion
1 can of rotel (mild)
1 can diced tomatoes (drained)
1 package shredded cheese (or 2 cups shred cheese)
1 can ranch style beans
1 cup sour cream


preheat oven to 350
brown beef and drain (set aside in large mixing bowl)
dice onion and add to mixing bowl
add all other ingredients other than cheese to the mixing bowl, stir until it is all combined
pour ingredients into a 9X13 dish top with cheese and bake 35 to 45 min until cheese is bubbly

serve with a salad, guacamole and tortillas or chips
