CHOCOLATE PEANUT BUTTER PIE

For the pie it's self:


1 pie crust (regular, chocolate, gram cracker or nutter butter type of crust)

1 SMALL package cream cheese (that has set out and is at room temp already)

1 cup peanut butter (I use creamy because we don't like chunky but if chunky is your thing go for it)
1 1/4 cups powdered sugar
1/2 cup whipping cream (as in heavy whipping cream NOT cool whip)
2 1/2 teaspoons vanilla




For the topping of the pie:




1/2 cup whipping cream (again heavy whipping cream not cool whip)

1/4 cup regular sugar

6 semi-sweet chocolate baking squares, chopped up (I have also used 1 1/2 hershy's special dark bar)

1/2 cup chopped peanuts





OK, heres the fun part....

In a large bowl beat cream cheese until smooth.Add peanut butter and 1 cup of the sugar.whip all of this until smooth (set this aside)



in a different a small bowl beat  whipping cream, sugar and vanilla until soft peaks form.( I like a chilled metal bowl for this step)


Slowly combine the whipped cream mixture to the peanut butter mixture (very slow and gentle here ladies)

pour combined mixture into pie shell (I usually use a pre -made crust like gram cracker or one of nutter butter but original recipe calls for old fashioned pie crust) set this in the fridge to "set" some while you make the topping





For the topping:



combine chocolate, sugar and cream together (a double boiler is best but I have been known to do this in a sauce pan on low to med low heat but stirring constantly) do NOT bring to a boil or over heat if using a saucepan



once topping is combined and melted (looks like hot chocolate) set this in the freezer to cool a bit (if your not in a hurry you can just leave it on the counter but I am always rushing at this point)



Once this has cooled use a hand mixer, kitchen-aid or is you need a workout a whisk and whip this into a fluffy chocolate like cloud

cover the pie in the fluffy topping and sprinkle nuts over the top (and drizzle with some chocolate syrup or magic shell chocolate topping if you want an extra pretty look)


Place pie back in fridge for an hour or two and serve chilled.
